Tahini

The primary ingredient, and the only ingredient in the tahini we use, is sesame seeds. The seeds are roasted first and then crushed in their own oils to make this liquid goodness. If you didn’t know already, sesame seeds are rich in beneficial minerals. They are a great source of manganese, copper, calcium, magnesium, iron, phosphorous, vitamin B1, and zinc. What do you need all of those minerals for? Here’s a few examples of what they can do for you:

• Copper helps to relieve rheumatoid arthritis
• Magnesium supports good vascular and respiratory health
• Calcium helps prevent colon cancer, osteoporosis, migraines and PMS
• Zinc is for good bone health

You’d think that would be enough for such a little seed, but there’s more! Sesame Seeds are also a good source of dietary fiber, they have been shown to help protect the liver from oxidative damage and to have a cholesterol-lowering effect! How good is that?? Want to know the secret? It’s the two special fibers in sesame seeds called sesamin and sesamolin.

Carob

The Carob Tree is a dome-shaped evergreen tree that has been cultivated in the Mediterranean region of Southeastern Europe and Western Asia since ancient times. The carob seeds grow in plentiful pods which are rich in protein and fiber and are sugary sweet. After harvest, the pods are used in a variety of ways: as a versatile additive used to flavor jams, liqueurs, juices and other food products; as a lower calorie, caffeine free and non-addictive cocoa substitute; and as a yummy molasses (our favorite).

Carob is high in fiber and rich in a class of tannins known as polyphenols. Rumor has it that this class of tannins has strong antiviral and antiseptic properties and may even help to reduce the incidence of Alzheimer’s disease through its antioxidizing effects! That’s one powerful pod!
Carob is also a demulcent, which is a medicine that sooths and coats mucous membranes from irritating substances. So sore throats beware!

Just one more thing though…it’s a nice looking tree but don’t lean in to smell the flowers or you’ll be in for less than a sweet surprise! Don’t say we didn’t warn you!
